Caroline’s Tasty Tacos

Recipe: What Megan’s Making – Slow Cooker Shredded Chicken Tacos with Cilantro and Lime

What are you making? It’s a question Wifey has fielded for years. And not just from me, but from anyone who has been in a kitchen with her. For example, we went to our friend’s place for the SuperBowl last night, and when we left, our friends thanked Wifey for being a good host.

Anyway, our friend Caroline apparently had a go-to crockpot recipe, and I was eager to get my hands on it. I assumed the recipe wouldn’t be too complex (and therefore perfect for me) because Caroline has a tendency to eat PB&J on rye bread. But when she finally sent me the link to the recipe, I lol’d. It was from a website called ‘What Megans Making’. Wifey’s name is Megan.

I honestly have no idea how Caroline came across this recipe. But in my mind, I envision her wanting to eat something delicious and homemade, and Googling “What’s Megan Making?”.

I made this recipe the day after I got home from the Mayo. I was exhausted and was feeling jumbled. So this recipe felt like a recipe for disaster. Wifey will often come home and whip up something random. I cannot do this. I need to shop in advance, stare at the items I have purchased, and mentally prepare myself to stick them in a crockpot (I believe my focus will impart my food with extra flavor). It was uncomfortable sticking these items in the crockpot without spending time staring the flavor into them. Also I have been dealing with some brain fog, so I’m shocked I didn’t forget to add the chicken. I think Hanky could sense my panic.

The recipe called for dried onions. But I only had live onions. So on a whim, I sliced the onions instead. This quick decision was terrifying (and I couldn’t make the decision on my own), so Wifey assured me that onions never hurt a shredded chicken taco. Also, I’m suddenly scared of flavor packets, and made a point of buying organic taco seasoning. It could still have MSG in it, but at least the MSG is organic. I used about half of the packet.

I crock potted the mixture for about one minute less than 6 hours (I got hungry) and shredded the chicken. Hanky started crying because he wanted some. So he got some.

I believe tacos are best served smorgasbord, so Wifey and I plated our own tacos. I thought the colors and shape of my Obama Birther Certificate tray would really bring out the beauty of these tacos. Hanky agreed.

So yeah, it was quick, and then slow, and I learned that I don’t necessarily need to stare the flavor into what I’m cooking.
