Healthy and Hearty Slow Cooker Stuffed Peppers
by Liz Jackson
Welcome to the tenth installment of Slow Liz’s 2014 Slow Cooker Challenge!
Recipe: Katrina Runs – Sweet Peppers
Guess who found her first recipe through Pinterest??? Ohh yeah. I had been looking for a Stuffed Pepper recipe that didn’t use dried garlic. I don’t know why but the concept of dried garlic really bothers me. I only want real garlic. Unless I’m buying a slice of pizza… Anyway, because this is Pinterest, I chose the recipe that came with the best photo:
Both the recipe and the blog resonated with me; Katrina runs marathons. I’m in the midst of a very slow slow-cooking challenge marathon. Katrina takes good photos of food. I’m sure there are other things too. But yeah, I made her stuffed recipe. I mean it’s not really her recipe, she found it in a magazine. But she deserves a lot of credit.
She’s not the only one who deserves credit. My boy Hanky also deserves some credit. Why? Because he’s super cute and he found his way into nearly every stuffed pepper photo.
So yeah, I followed the recipe and it cooked, blah blah blah. And then we ate. And it was really really good. Wifey said this recipe is good in the way my Sloppy Joes were good. And I’m glad, because there’s enough stuffing to make another batch of peppers.
Oh, and I took this hilarious photo as we were eating dinner. Can you guess which pepper is mine?
