Slow Cooker Cauliflower Curry

Week 14 proved to be a bit of a challenge. And the challenge wasn’t the recipe. The challenge was my focus and resolve.
You see, I have been so focused on and excited about my petition that I have not been interested in writing or thinking about anything else. And it’s so wonderful to feel so passionate about something I’m doing. But I have limited energy, so writing about my meal became the actual challenge this week.
That being said, you have got to try this fantastic Curried Cauliflower recipe.
It was so good. Wifey said it was complex (which I knew was a compliment because I watch Top Chef). She even said there were layers of flavor.
The recipe would have been much more straight forward had I been able to locate tikka curry paste at the grocery store. Instead I turned to my good (looking) friend Jamie Oliver who helped me make tikka curry paste from the contents of my spice cabinet. Friend might be a strong word considering we’ve never met. But I like him and the good he does nonetheless. I wonder if he would sign my petition?
When the recipe was almost done, I tasted it and knew it needed something. But I didn’t know if that something was citrus or vinegar. A quick Google search told me to add lemon. And Google did not let me down. The lemon was the missing piece (or as Wifey called it, a delicious layer).
The rice on the other hand was a fiasco. I burnt it and we had to start over. Lesson learned, next time you think you smell something is burning, something probably is.
– Make your own tikka curry paste.
– Add lemon
– Don’t burn the rice
Do those three things and you will find yourself eating a delicious meatless Monday dinner!
