Speedy Stir Fry from the New York Times

Recipe: Spicy Stir-Fried Tofu With Corn, Green Beans and Cilantro – NYTimes.
I made a New Years Resolution of one slow cooker meal a week. But I fell off the wagon. And how can you blame me? I nearly killed my partner. It didn’t help that I was trying to make crockpot meals in the heat of summer. It didn’t help that after a while, all crockpot meals start to taste the same.
What is the point of a New Year’s Resolution if you are doing something purely for the sake of doing it? Resolutions are made to enable growth and improvement. And I am growing, I am improving. So when I met Michael Ogg and he mentioned the he prefers to cook with fresh veggies because you don’t need to do much to them, I realized this was the answer.
I am sure that I will pull out the crockpot again come Fall. But until then, I am going to learn new cooking skills while enjoying the fresh options available to me. For the first installment of Liz’s 2014 Speedier Cooking Challenge, I made stir fry. And I absolutely killed it. It was FRESH. I cannot recommend this recipe enough. It was GOO-OOD.
Since stir-fry’s move so fast, I decided to prepare the ingredients ahead of time. I just thought it was a Food Network thing. But Megan called it a mise en place, so it must be a French thing.
Anyway, prepping in advance was a smart decision, though it led to a ton of dishes. I learned how to flip food in the wok. And it was fun!
