Recipe: Grilled Polenta and Zucchini Salsa – Love & Lemons
For my second installment of Slow Liz’s Speedier Cooking Challenge, I couldn’t resist making this recipe. It’s the perfect Meatless Monday dish. It’s hearty and light, fresh and rich. It’s a perfect dish for this fall-like-summer-weather.
So here’s what I did:
I went to the local farmers market and bought lots of tomatoes and vegetables:
And then I came home and made the recipe with one BIG exception. I did not grind my own Polenta. Why? Because only a professional food blogger (or Amish person) would do that. Instead, I bought some lovely, local polenta and watched some baseball with my free time.
