Recipe: Grilled Polenta and Zucchini Salsa – Love & Lemons

For my second installment of Slow Liz’s Speedier Cooking Challenge, I couldn’t resist making this recipe. It’s the perfect Meatless Monday dish. It’s hearty and light, fresh and rich. It’s a perfect dish for this fall-like-summer-weather.

So here’s what I did:

I went to the local farmers market and bought lots of tomatoes and vegetables:

Farmers Market And then I Instagrammed a photo of a purple bell pepper, because I thought it was cool looking, (it was not cool looking enough to buy).

Purple Bell Pepper And then I came home and made the recipe with one BIG exception. I did not grind my own Polenta. Why? Because only a professional food blogger (or Amish person) would do that. Instead, I bought some lovely, local polenta and watched some baseball with my free time.

Farmer Ground Flour Polenta Only tip? Give yourself plenty of time to grill the polenta. It takes for-ev-er.

Then dig in and enjoy!!
